This is one of those meals that looks like a rainbow in a bowl. Roasted sweet potatoes, hearty black beans, fresh herbs, and a tangy lime sauce bring everything together. It’s filling, wholesome, and endlessly customizable.

Ingredients
  

  • 2 large sweet potatoes diced
  • 1 tbsp oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 can black beans drained
  • 1 cup cooked rice or quinoa
  • ½ cup chopped cilantro
  • Optional toppings: ½ avocado sour cream or plain yogurt

Quick Lime Sauce

  • ½ cup yogurt or mayo
  • Juice of 1 lime
  • Pinch of salt

Instructions
 

  • Toss sweet potatoes with oil and spices. Roast at 400°F for 25 minutes.
  • Warm black beans in a pot or skillet.
  • Assemble bowls: layer rice, roasted sweet potatoes, black beans, and fresh herbs. Add avocado or a dollop of yogurt if you like.
  • Drizzle with quick lime sauce before serving.
