Chickpea & Spinach Coconut Curry

This curry is one of those beautiful meals that tastes like it took all day, but it comes together in about 20 minutes. It's cozy, comforting, and nourishing—perfect for a quick weeknight dinner.

Ingredients
  

  • 1 tbsp oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 tsp grated fresh ginger or ½ tsp ground
  • 1 tbsp curry powder or garam masala
  • 1 can chickpeas or 1½ cups cooked
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 2 big handfuls fresh or frozen spinach
  • Salt and pepper to taste
  • Squeeze of lime or lemon optional but brightens it!
  • Cooked rice to serve

Instructions
 

  • Sauté onion in oil until golden. Add garlic and ginger; cook 1 minute.
  • Stir in spices, chickpeas, tomatoes, and coconut milk. Simmer for 10 minutes.
  • Add spinach, and cook another 2–3 minutes.
  • Season to taste and add a squeeze of citrus. Serve over rice or flatbread.
