Creamy Garlic Pasta with Peas & Parmesan

This dish is everything I want on a busy evening—creamy, garlicky pasta with a hit of green from the peas. It’s simple, flexible, and feels like comfort in a bowl.

Ingredients
  

  • 8 oz pasta any kind
  • 1 tbsp butter or oil
  • 3 garlic cloves minced
  • cups frozen peas
  • ½ cup reserved pasta water
  • ½ cup milk or cream
  • ½ cup grated Parmesan or nutritional yeast for dairy-free
  • Salt pepper, pinch of nutmeg or chili flakes
  • Optional: chopped parsley or lemon zest to finish

Instructions
 

  • Cook pasta and reserve ½ cup of the cooking water.
  • In a pan, sauté garlic in butter until soft. Add peas and stir until warmed through.
  • Add cooked pasta, reserved water, milk, and cheese. Stir until creamy and heated through.
  • Season to taste and garnish with herbs or zest if you like.
