Hearty Lentil Soup

This one-pot lentil soup is packed with plant-based protein, fiber, and flavor. It’s my go-to when I want something nutritious and warming that freezes well and doesn’t break the bank.

Ingredients
  

  • 1 cup dry lentils
  • 1 onion diced
  • 2 carrots diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 4 cups broth or water
  • 1 tsp salt 1/2 tsp black pepper, 1 tsp cumin
  • 1 tbsp oil

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Add onions, carrots, and garlic. Sauté 3–5 minutes until softened.
  • Stir in lentils, tomatoes, broth, salt, pepper, and cumin.
  • Bring to a boil, then reduce heat and simmer for 25–30 minutes until lentils are tender.
  • Serve hot with bread or over rice. Leftovers freeze beautifully!
