Hearty Lentil Soup

This one-pot lentil soup is packed with plant-based protein, fiber, and flavor. It’s my go-to when I want something nutritious and warming that freezes well and doesn’t break the bank.

Instructions
Heat oil in a large pot over medium heat.
Add onions, carrots, and garlic. Sauté 3–5 minutes until softened.
Stir in lentils, tomatoes, broth, salt, pepper, and cumin.
Bring to a boil, then reduce heat and simmer for 25–30 minutes until lentils are tender.
Serve hot with bread or over rice. Leftovers freeze beautifully!
