Herbed Lentil Patties with Garlic Yogurt Sauce

These crispy little lentil patties are packed with flavor and super satisfying. They make a great main course with a salad or roasted veggies, and they’re even good cold for lunch the next day.

Ingredients
  

  • 1 cup cooked lentils green or brown
  • ½ cup breadcrumbs or cooked rice
  • 1 egg
  • 1 small onion grated
  • 1 tsp salt
  • Pepper to taste
  • ½ tsp thyme or oregano
  • Oil for pan-frying

Garlic Yogurt Sauce

  • ½ cup yogurt
  • 1 grated garlic clove
  • Pinch of salt
  • Squeeze of lemon juice

Instructions
 

  • In a bowl, mash lentils with breadcrumbs, egg, grated onion, and seasonings until well combined.
  • Form into small patties.
  • Heat oil in a pan and cook patties for 3–4 minutes per side until golden and crisp.
  • Serve warm with garlic yogurt sauce and a simple salad or cooked veggies.
