Simple Chicken Soup

We sometimes add pasta or rice, but more often than not we eat it without. It’s a great soup to rejuvenate your body after you’ve been sick, too.

Ingredients
  

  • 2 quarts chicken stock
  • 1 quart canned crushed tomatoes sometimes we add it, sometimes not
  • 2 quarts canned chicken
  • 1 quart canned potatoes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 onion chopped
  • 2 cloves garlic
  • a pinch of basil and tarragon or herbs of your choice.
  • pasta* optional

Instructions
 

  • In a large soup pot put some butter or olive oil in the bottom and add the onions and garlic.
  • Cook until tender or caramelized if you like. I cook my onions first and then add the garlic since garlic tends to cook faster and can burn before the onions are cooked.
  • Add the remaining ingredients and heat through.
  • So easy, so simple and so good!
